Homemade Soft Pretzels
Homemade Soft Pretzels
(From crafster.org)
2-3 cups bread flour
1 tsp yeast
1 tbsp brown sugar
1 cup warm milk (110 degrees, or about a minute in the micro)
1 tsp. salt
Mix all of these together until they form a ball. Start with 2 cups of flour and then add it a tablespoon at a time until it becomes workable with your hands. Knead the dough for 5 to 10 minutes. Let it relax for 5 more minutes.
Meanwhile, get a pot of water and 4 tbsp. baking soda to a simmer. Cut your dough into 6 pieces. Roll them into "snakes" and make the pretzel shape. Carefully, with a spatula, dunk the pretzels into the simmering water for 5 seconds. They should begin to float. Take them out and place them on a greased cookie sheet (I put my pretzels on aluminum foil sprayed with Pam and still had trouble with sticking, use lots of grease!). Sprinkle with Kosher salt and bake for 12 to 14 minutes at 425 degrees.

Snowmageddon the SEQUEL/Peanut Butter and Jelly French Toast
Fortunately we were able to sneak out for a few minutes yesterday afternoon before Snowmageddon the sequel struck. We visited Storyville at the Rosedale library. Above is Blakey in their "baby garden." It won't be long that he will graduate the baby garden as it is only for babies that are not walking yet. Caleb enjoyed running around and reading with Daddy.
Ingredients:
½ cup peanut butter
8 slices sandwich bread
½ cup jelly (any flavor)
5 large eggs
1/3 cup milk
2 teaspoons pure vanilla extract
4 tablespoons butter
½ cup maple syrup, warmed
Directions:
1. Spread the peanut butter on 4 bread slices and the jelly on the other 4 slices, and combine to make 4 sammies.
2. In a wide, medium bowl, whisk together the eggs, milk and vanilla.
3. In a large nonstick skillet, heat 2 tablespoons butter over medium heat. When the butter is almost melted, dunk two of the sammies into the french toast batter and let the excess drip off. Place in the pan and cook until golden brown, 3 to 4 minutes for each side. Repeat with the remaining 2 tablespoons butter and 2 sammies. Let cool slightly and cut into sticks; serve with the warm maple syrup.

Snowmageddon 2010/Caleb's 4th Birthday
Surprisingly I slept like a baby that night... as I was sleeping all heck was breaking loose outside as we went from a snow warning to a blizzard warning overnight. By the time I came down at 7:00 a.m. the next morning, my backyard had about 18 inches of snow and looked like this:
This historical snowstorm coincided with Caleb's 4th birthday! We had planned a party at Chuck E Cheese that unfortunately had to be cancelled. Caleb was a good sport about it and it actually turned out be an awesome day that I don't think I'll ever forget. He started his day by opening presents (it felt strangely like Christmas morning) and having a big, homemade breakfast. I snapped this shot to start our day!
As we were eating breakfast one of the local news stations (ABC 2 News) asked that people send in their snow pictures. I emailed the picture above and story and it was aired at least 3 times on Saturday and Sunday! Here is a link for a youtube video of him on television:
