Fun Cookie Dough!

I know it has been FOREVER since I've posted a blog here... I am almost ashamed. We've been weathering a stormy, busy time in our lives but we are coming through it all shining! I do really enjoy blogging though and hope that I will get back on track with it!

Tonight we had fun with the Joe Corbi's "Colorful Cookie Dough" that we recently bought from Caleb's school for a fundraiser. At about $14 it's a little pricey, but we have enough left for at least one more round of fun. The kids (and the big kids) used the red, green, blue, and yellow dough to make all kinds of fun shapes from Christmas trees to the letter "B" for Blake and "C" for "Caleb." It was very play-doh like and we really had a hoot!

Pumpkin Cookie Recipe


Pumpkin Cookie Recipe (From about.com)
1/2 cup butter, room temperature
1/2 cup granulated sugar
1/2 cup light brown sugar, firmly packed
1/4 cup molasses
1 egg
1 cup pumpkin puree
2 cups all purpose flour
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 cup milk
Sifted Confectioners' sugar for dusting
In a large mixing bowl cream butter and both sugars together until light and fluffy. Beat in molasses and egg. Stir in pumpkin puree'. In another bowl sift together flour, baking soda, cinnamon, and nutmeg (I used a fork). Stir flour mixture into the creamed mixture along with the milk. Blend thoroughly, but don't over beat. Drop cookie dough by rounded teaspoonfuls onto greased cookie sheet. Bake 12 minutes at 375 degrees.
The cookies came out extremely moist and soft, almost like mini pumpkin cakes. Very tasty!

Easy Dip

Easy Dip (Thanks Cindy!)

1 8 oz. package of cream cheese
1 jar of salsa
Shredded cheddar

Spread cream cheese in the bottom of a pie plate (I softened it in the microwave to make it spread easier). Pour salsa over top of cream cheese. Sprinkle shredded cheddar on top. Bake at 350 degrees for 10-15 minutes. Enjoy with crackers or nacho chips!

Baugher's Apple Farm & Apple Dip

Yesterday we took a trip to Baugher's Farm in Westminster. I have heard several people say how awesome it is, so I wanted to see it for myself! It took just under an hour to get there and was definitely worth the drive. You take a hayride through the farm to the apple orchard and then pick your own apples! The boys really enjoyed walking through the orchard and picking apples. We got a little bit picking crazy though and wound up picking a peck of apples!


They also have a market, moonbounce, face painting, live music, a petting zoo and several other farm activities. There is also currently a hayride to pick your own pumpkin from the field, but we decided to wait for that. I worry that buying a pumpkin this early would mean that it would be mush by Halloween night. Their website is: http://www.baughers.com/ The apples were 99 cents a pound and the hayride was $1 a person, but they didn't charge us for Blake.


After visiting Baugher's farm we checked out their restaurant which we also highly recommend. It is very family friendly, affordable and dee to the licious!

With the plethora of apples in our kitchen I am now looking for inventive ways to use them! Today I made a caramel apple dip for the football game. It was easy and tasty! Here is the recipe if you'd like to give it a try!
Caramel Apple Dip (Taken from examiner.com)
Ingredients
8 oz. block of cream cheese, softened
1/2 cup of brown sugar, preferably light
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 jar of your favorite caramel
1/2 cup of Heath english toffee bits (usually with baking items, I bought the milk chocolate kind and used more than the 1/2 cup it called for)
6-8 Apples for dipping
1. Blend cream cheese, brown sugar, cinnamon and nutmeg until smooth. Spread in the bottom of a pie plate.
2. Cover with caramel (I microwaved it for a few seconds so that it was pourable).
3. Sprinkle Heath bits on top.
4. Eat!

Strawberry White Chocolate Chip Cookies & Cookie Dough Scoopers!

I tried this recipe for Strawberry White Chocolate Chip cookies from Shawna's blog Nuts to You (http://shawnahenry.blogspot.com/). I love strawberries and I love anything with white chocolate, so it seemed like the perfect combination. It was extremely simple. There are only 4 ingredients and it took less than 5 minutes to get them in the oven. Blakey and Caleb love them and so do I!
Strawberry White Chocolate Chip Cookies
1 box of strawberry cake mix
1/2 cup oil
2 eggs
3/4 cup white chocolate chips

Mix ingredients, scoop onto cookie sheets (I only use airbake sheets when baking cookies), bake for 10 minutes at 350 degrees.

Super easy!
On a random side note, do you know that there is such a thing as a cookie dough scooper? My mother in law got me one for my birthday several years ago and I LOVE it! It makes the process of putting cookie dough on a cookie sheet quick and precise. All of the cookies wind up being the same size. Before the kitchen doo dad I had problems with my cookies being different sizes! :)

Take Me Out to the Ballgame!

Last night we went to the Ironbirds game in Aberdeen, MD. I honestly was exhausted and kind of grumpy about going... boy am I ashamed now! As most of you know the Aberdeen Ironbirds are owned by the legendary Cal Ripken Jr. For those of you that are not from MD (I know there are a few people reading this from out of state) he is our hometown hero. According to the staff at the stadium, Cal usually only attends one game a year. Last night happened to be that game! From what I've heard he rarely signs autographs/take pictures, but last night was one of those rare moments! After participating in the opening ceremonies of a special event (the Little League World Series) he happily signed autographs and took pictures with kids.
He even posed for a priceless picture with Caleb!

A few minutes later he began walking through the stadium. As he got near our section I yelled, "Cal, would you take a picture with the baby?" He actually turned around! He then said jokingly, "Do you realize how long it has been since I've held a baby?" He grabbed the baby up and let me take a picture! He even held him for a few moments as the crowd said "Aw!"
I've heard gossip that he can be mean, etc. but that was NOT my experience at all. He is wonderful with kids! It seems like his life's purpose at this point is helping kids play baseball. I think he gets agitated with people that are trying to make money off him, and really who can blame him?


The rest of the evening was a little hectic... the kids usually go to bed at 7:30 and the game didn't even start until 7:35! By 8:30 the kids were nuts! Caleb spent most of his evening on Traci's lap (my brother's girlfriend), I told Sean that he has some serious competition! I'm so glad we went!

Instant Answer to Prayer

I have recently grown VERY worried about Blake. He's 18 months old, wasn't walking, and wasn't saying as many words as I thought he should be. I was ready to discuss it with the pediatrician at next week's checkup to see if I should look into getting him special services. This was a hard realization for me to make and accept. I am ultra sensitive about him because of the issues he had during pregnancy and the holes that still remain in his skull as a result of these issues.

I did the best thing I could think of when I came to this realization last week and I prayed hard! Out of nowhere, in the last 24-48 hours he has been saying a ton of new words (go, stop, bad, whoa, uh oh). Then tonight I nearly lost it when he went from my boy that would only crawl or walk around holding furniture to a boy that could run! While we were at the library he just took off! I was so happy I almost cried! What is even better is that I had my digital camera on me to catch the moment! You can watch the video at:

Barbecued Beef and Bow-Tie Dinner

With the slow pace of summer we've been trying some new recipes. Some of my experiments have been good, others not so much. This recipe (that Jason actually cooked) turned out pretty good! I'm not a huge fan of barbecue, but would still rate it 3 out of 4 stars!

Barbecued Beef and Bow-Tie Dinner (from Betty Crocker)
  • 1 lb. lean ground beef
  • 1 cup red bell pepper, chopped (I omitted this, I hate peppers)
  • 1 1/2 cups uncooked mini bow-tie pasta
  • 2 1/2 cup beef broth
  • 1/2 cup barbecue sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup frozen corn, thawed
  • 1 1/2 cups shredded cheddar cheese

1. Brown ground beef, drain

2. Add bell pepper; cook and stir 1 minute. Stir in pasta, broth, barbecue sauce, salt and pepper. Heat to boiling; reduce heat to medium-low. Cover; cook 15 minutes, stirring occasionally, until pasta in tender.

3. Stir in corn and 1 cup of cheese. Top with remaining 1/2 cup cheese. Cover; cook 3 to 4 minutes longer, until corn is hot and cheese is melted.



Blake was a hot mess after eating this dinner! He had barbecue everywhere... even in his ears and hair! :)

Sport Clips

Sports Clips opened a brand new barbershop at the Avenue in White Marsh today. As a part of their grand opening celebration (and 700th store) they had $7.o0 haircuts, which was donated to charity, and you received a coupon for a free haircut the next time. They were also trying to break the Guinness record for the most haircuts in 12 hours. I still have not heard whether or not they met the goal! There was even a Guinness judge there to confirm whether or not each haircut was legitimate. It was really neat!
Each haircut started in the "Locker Room" where they wash your hair. This was the first time Caleb had his hair washed like this. Usually they just wet his hair down. He did very well!
Next it was onto the haircut chair. The shop has a neat sports theme (lockers, etc.) and there are televisions everywhere broadcasting different sporting events.

In addition to the haircut deal, the boys got Orioles foam fingers and got to meet Orioles pitcher #49 Jason Berken.

Outside was the "Crazy Ravens Guy" and his Ravens mobile.

I will definitely take Caleb back! (And Blake too... whenever I get the courage to cut his hair! I am putting it off as I feel he won't look like a baby any more!) Smores Bars

I made this recipe for dessert tonight (I had my family over for dinner). It was extremely delicious! I am glad that I had family over and shared with neighbors as having only 1 small piece was tough! ;)

Smores Bars (Taken from TasteofHome.com)
1/2 cup butter, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
3/4 cup graham cracker crumbs (I just crushed up regular graham crackers in a ziploc bag using a rolling pin)
1 teaspoon baking powder
1/8 teaspoon salt
5 hershey bars (1.55 ounces each, I bought a 6 pack at Target)
1 cup marshmallow creme
1.In a large bowl, cream butter and sugar until light and fluffy. Add egg and vanilla; beat well. Combine the flour, graham cracker crumbs, baking powder, and salt. Gradually add to creamed mixture. Hold 1/2 cup for topping.
2. Press remaining mixture into a greased 9 inch square pan. Place candy bars over crust. Spread with marshmallow creme (trickiest part of the recipe... I microwaved it to make it more spreadable, which worked... except that it exploded all over the place inside of the microwave).
3. Bake at 350 degrees for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars.

Fantasy Fudge

My mother-in-law recently mentioned that she wanted fudge, so I made some! Everything went well with two minor exceptions... First, I didn't read the ingredient list carefully enough and did not have enough chocolate. I had to run to the grocery store quickly as I had already put the buter, sugar, and evaporated milk in the pot. I really need to pay attention! Second, I forgot the vanilla! I did take a little nip off the mixing spoon and it still tastes good despite this mistake. Considering it cost an arm and a leg to buy fudge, this is the way to go! The recipe is on the side of Kraft Jet-Puffed Marshmallow Creme jars!


Ingredients:
3 Cups Sugar
3/4 cup butter (1 1/2 sticks)
1 small can evaporated milk (5 oz. Do NOT use sweetened condensed milk)
1 1/2 package (12 squares) BAKER's semi sweet chocolate, chopped (super messy)
1 jar (7 oz) JET-PUFFED Marshmallow Creme
1 cup walnuts (I did not use this)
1 teaspoon vanilla
1. Line 9 inch square pan with foil. Allow foil to extend over sides.
2. Place sugar, butter, and evaporated milk in a large saucepan. Bring to full, rolling boil on medium heat. Stir constantly (or it will scald!). Boil 4 minutes then remove from heat.
3. Add chocolate and marshmallow creme, stir until completely melted. Add walnuts and vanilla.
4. Pour immediately into prepared pan. Let stand at room temperature for 4 hours before cutting. Cut into 1 inch squares. Store in tightly covered container at room temperature.

If I Had a Dollar for...

each microscopic Styrofoam ball that we sucked up in the vacuum tonight, I would probably be a millionaire. Caleb's nap did not go so well today... in fact, it was a disaster! He was quiet, so I thought he was actually sleeping. Puh! When I came to get him out of bed I discovered that he had chewed a hole (this is why I refuse to let him have a dog... I don't want things getting chewed, ha) through his Lightning McQueen Car plush. This plush contained said Styrofoam balls. The picture above really does not do the situation much justice. The balls were under his bed, on the floor, on the bunky board, between the bunky board and wooden rail, all over his sheets, all over his comforter, and stuck to his stuffed animals. The best part is that they have a strong static charge! They are stuck in our hair, clothes, and shoes. This is spreading the Styrofoam balls to every inch of my house. I am determined they will still be surfacing ten years from now. Help!

To add injury to insult, 4 year olds are good at that, he also succeeded in totalling his expensive room darkening blind. Jason will have to buy ANOTHER one from Home Depot on the way home from work tomorrow.
I made him sit in time out for 30 minutes. Then I did something kind of mean... His swim school called and cancelled his class for tonight because there was an "accident" (a kid pooped in the pool) at the pool. I told him that he wasn't going to swim class because he was punished. He was devastated. In some small way it honestly felt like justice! For tomorrow's nap I will be watching the video monitor, it may be more interesting than New Jersey Housewives any way!

Garlic Ranch Chicken

We tried this recipe for the first time this week and it was DELICIOUS! The leftovers also made one of the best chicken salad sandwiches I have had in my life!

Garlic Ranch Chicken

4 skinless, boneless chicken breasts
1 cup fat free ranch dressing
2 tablespoons chopped garlic
1 tablespoon fresh basil

1. Combine the dressing, garlic, and basil in a gallon size ziploc bag. Add chicken to bag and seal. Allow to marinate for 1/2 hour (we marinated ours over night).
2. Preheat grill to medium heat.
3. Grill chicken breasts for 6 to 8 minutes on each side, turning occasionally, until juices run clear when pierced with a fork.

Life's a Beach

This weekend we went on our summer vacation in Ocean City, MD! For the most part (minus my brother's parked car getting hit by a drunk driver) we had a wonderful time. We spent most of our time on the beach or in the pool. We also indulged in all you can eat steamed crabs for dinner two nights in a row (Higgin's Crabhouse is amazing!). I even got to take a two hour nap!

Blake was initially scared of the sand. He stayed in this position for five minutes, unsure of whether or not he wanted to move in it. He quickly changed his opinion though and was eating the sand in no time!
Caleb stayed in the sand the entire time. He was terrified of the water! I'm not sure how to get him over this fear, I don't think there are ocean swimming lessons! He did enjoy swimming in the pool at our condo. He was actually independent.

Letterboxing


This weekend we dipped our toes into the waters of letterboxing for the first time. Never heard of it? A few weeks ago we had not either. Basically all throughout the country people have hidden boxes, it's essentially a treasure hunt. Each box contains a stamp, ink pad and journal. You carry your own unique stamp and journal. When you locate the letterbox you put your stamp, name and date in the letterbox journal and you put the letterbox stamp in your own journal.
Our first letterboxing experience was at Dutch Wonderland in Lancaster, PA. We only found 1 letterbox and we know there are 2 more out there. It was an exceptionally hot day and after locating 1 letterbox we were beat! We plan to locate the other 2 before this season is over. The Karate Kid Movie

This week we went to the Karate Kid prescreening in White Marsh since I won passes from Fox 45 News. I was excited to win these tickets because it was actually a movie that I wanted to see (I've won passes in past that I didn't necessarily want).

The movie was pretty good! It had a lot of humor intertwined with the drama. Jaden Smith's acting and skills are insane! He is also so cute that I could just pinch his cheeks! My two complaints are that it was very predictable (like the Titanic you kind of knew how it would end) and way too long (2 hours long).
I give it 3 out of 4 stars, if you don't get to see it in the theaters definitely redbox it in a few months!

Party Hardy!

We have just survived 5 parties in 5 days!


It started on Friday when I threw my Mom and sister Sara a Memorial Day themed cookout for our monthly "ladies night." I am very fascinated by Sandra Lee (Food Network... google her) and the concept of "tablescapes." Mine aren't nearly as elaborate or fancy as hers because of my budget, but even a quick trip to the dollar store can spruce up any party! I had everything from red/white/blue lights to balloons!

On Sunday (we went to Pennsylvania on Saturday and visited Dutch Wonderland/Chocolate World) we went to John John's birthday party in Fallston. The Weidinger family really knows how to throw a party! From the dunking tank to musical chairs Caleb really had a ball!

On Monday we went to Jason's parents for a Memorial Day cookout. My family was invited too, so it really made for a nice day! I was happy that Caleb actually swam in the big pool, even if it was only for a few minutes!

Today, Tuesday I threw a baby shower at work for a coworker. My mother in law was really helpful and had a lot of decorations for me to borrow. The best moment was when Jenn's Mom and kindergarten teacher walked in from Frederick. I had gotten her Mom's phone number through the grapevine and invited her. The look on her face was priceless!

After the baby shower at work (and field day all day) I came home, quickly showered, and then Blake and I headed to Stacey's for our small group picnic. I am sad that I won't see these ladies every Tuesday for a couple months!
We are so blessed to be invited to so many parties/be able to have so many parties. However, I think I am partied out for now! I am looking forward to a quiet weekend. :)

Shrek the Final Chapter and Hashbrown Casserole



Yesterday Caleb and I saw the final installment (we'll see if that's really true in a year or so) of the Shrek movie series. We went with our buddies, the Cosden family. I honestly wasn't overly excited about seeing another Shrek movie, but Caleb has asked many times to go. To be honest my attitude quickly changed and I think I may have enjoyed more than Caleb! (If that's even possible!) The movie is loaded with appropriate adult humor! I found myself laughing more times than I count, which is rare for me! We saw the 3-D version, which made the experience even cooler. The premise of the movie is what would life would be like if Shrek never existed and never broke Fiona's curse (beautiful princess by day, ugly ogre by night). My favorite character in this movie is the overweight Puss in Boots... I think he reminded me too much of my own fat cat Simba. I give this movie four out of four stars! Don't wait until it comes to Redbox, go to theatre! :)



This was a delicious hit at the poor Friday breakfast at school this week. So easy to make too!

Hashbrown Casserole

1 package, 32 oz bag of hash browns
2 cans (10.75 oz) cream of potato soup
8 oz. of cubed ham (I threw in extra)
16 oz. sour cream
2 cups of cheddar cheese
1 1/4 cup grated Parmesan cheese

Preheat oven to 375 degrees.
Mix the first 5 ingredients together, you need a big bowl.
Spread into a 13x9 pan.
Sprinkle parmesan on top.
Bake for 1 hour.

Fondant and Toilet Seats (Yes, You're Reading This Correctly!)

Those of you who know me well know that my favorite television show is "Ace of Cakes." You also know that while I am happily married, I have quite the crush on baker Duff Goldman. He drives me insane! (LOL)
On Sunday night I perused the Charm City Cakes blog as I do once or twice a month (www.charmcitycakes.com). I squealed when I found out that Duff has FINALLY put out a line of baking items from cake mix, to pans, to fondant. My only disappointment was that I read this around 10 p.m. and the only store you can buy it at (Michael's Craft Store) was already closed! I seriously wanted to drive over there in my pajamas! Alas, I waited until after work on Monday and had a field day! As you can see above there is so much to choose from and I want it all! Since my Mom's birthday was this week we decided to start with hot pink fondant, butter creme cake mix, a fondant smoother, and decorative icing.
I've never, ever worked with fondant or tasted it. I am dying to come up with the time and money to take a cake decorating class! Initially I was going to make the cake and place the fondant, but when Jason offered I took him up on it. He did an amazing job in my opinion!
To be completely honest, the cake was delicious! Definitely worth the $8 pricetag (although you better believe I used a 40% off coupon). The fondant while gorgeous, was not tasty. I really don't think it has anything to do with the Duff brand though. It's something about the play-doh like texture that makes it unappealing to me. I think fondant's primary purpose is to be decorative, even if it is edible!
My Mom was so impressed she made us wait to blow out her candles so that she could take a picture!

On a completely unrelated note (HA), Jason found the COOLEST toilet seat EVER at Home Depot today. It is an adult and toddler seat in one! You simply fold down the smaller seat and...

it turns into a toddler potty! Those of you who do not have kids think I am insane. Those of you who have kids think I am a genius. Either way, Caleb appreciates not having to hold on for dear life whenever he makes a deposit!




Mother's Day Weekend Part 2

I know I'm a bit behind... but life has been busy! I wanted to post the rest of our Mother's Day fun! I couldn't post our Mother's Day project for the Grandmoms until after I gave it to them... my Mom is on facebook and I feared she might actually figure out how to use it!
We made garden stepping stones for both Grandmoms. I bought cute handprint kits at the AC Moore in White Marsh. Caleb did a nice job with pushing his hand in just right. Blake just wanted to squish the clay in his hands though, so his turned out to be more of a fist print than a handprint!
I thought the finished product turned out nice!


On Mother's Day we decided to have both families over to our house for lasagna. This way neither of our Mom's had to worry too much about cooking, cleaning, etc. The funniest moment of the day was when the Grandmoms gave each other a gift... the same exact thing! They bought the same flower in the same color! Hilarious!
Jason went out of his way to recover from last year (long story) and it was a beautiful day! He gave me color coded index cards for chores that I want done around the house, too fun!

Mother's Day Weekend Part 1

Today we just got in the car and drove. These tend to be our best most memorable days!

We started out by going to breakfast at IHOP in Timonium. Jason's godmother got us a giftcard there for Christmas and we didn't want it to go to waste. While we were there there was a quick, but heavy rainstorm. I worried that our fun might be short lived! Fortunately, but the time we were done the rain had stopped.

We decided to head to Dutch Wonderland next in Lancaster. We didn't tell Caleb where we were going so he was very surprised when we pulled up in the parking lot. I think this is the way to go from now on Dutch Wonderland days. This way he is not in our bed at 6:00 a.m. ready to go! Due to the slight chance of rain I guess a lot of people were scared away. This worked to our benefit! Even though we didn't arrive until 10:30 (30 minutes after the park officially opened) we were able to park right in front of the castle. We walked right onto every ride and it felt like we had the park to ourselves. We ran into "Duke" the dragon on the way in, Dutch Wonderland's mascot. I love how this picture turned out! Usually I am the one holding the camera so I don't have nearly enough pictures with the boys.
In honor of Mother's Day they had a whoopee pie making station. Caleb enjoyed constructing and decorating it by himself! If you've never had a whoopee pie it is basically cake sandwich with icing in the middle.

He made a huge mess, but fortunately there was an outdoor hand washing station right by. Very good planning on their part!
The most memorable (and terrifying) moment of this visit was riding on the skylift. Even though there was no rain and there was plenty of sunshine, it was terribly windy! As Caleb and I took it across the park our lift blew back and forth. I thought for sure we were going to fall hundreds of feet to the ground. I shared my fear with the operator and he said that if got much windier they would close it for safety reasons, no kidding! Instead of taking the sky lift back to where Jason and Blake were, we walked! It was good exercise any way!

After 2 hours we had accomplished a lot and decided to head to the Bird In Hand farmer's market. We are having mother's day dinner with both of our families tomorrow, and rather than making a dessert I wanted to buy one to treat myself to less time in the kitchen this mother's day weekend. Unfortunately we didn't find anything there really, so we got in the car. As we were heading down the road I saw a tiny sign that said "Bird in Hand Bake Shop, turn right, then make your second right." I was behind the wheel so I made the quick turn. We drove through some serious Amish territory and I was about to turn around because I felt like we were driving too far when we found it. What a find! It was a cute little bakery/craft store nestled between a quaint Amish schoolhouse and farm. They had an awesome playground for children and a petting zoo. From the bake shop we headed to Shrewsbury for fresh green beans from their Amish market and to allow Caleb to play in the giant playplace in their McDonald's. All in all it was a beautiful weekend! I tend to get very sappy on Mother's Day weekend and found myself thinking "I am so lucky!" many times today!
